After you scouted him and saw 2-3 gates plus forge, that means no gas yet I'm assuming?...maybe... THat means only zealots are coming. Don't tech straight to Reavers when they gotz 3 gates and you gotz no Zs or cannons to defend his "very easy to stop" zealots rush garbage.
I might be on tonite, but I went on a big binge yesterday, so I dunno. I understand what you're saying, I lost many games before winning even one. I don't have time to play endlessly to get better, and micromanaging a lot is stressful and the opposite of fun for me.
To get at least a few legit 1 v 1 wins, here is what I suggest. Pick one race one strat one map. Find a good simple build for that race towards some strategy (i.e. Muta rush with zerg on dire straits, or my personal fave, hydra drop with zerg on dire straits). Many web pages such as GX starcraft have different builds posted. Master that build (i.e. gets you 6 or 9 mutalisks in x minutes every time if not harrassed...). Play ladder newbies (sub 1000 record, few games played) all the time. You will get some wins and feel a bit better. If the other player recons well or just happens to counter your strat perfectly, you will lose, but you will often win if you execute the simple build.
My problem in SC was that there are too many choices and units and I try to do too many things instead of one thing really quickly or well, and wind up without enough economy or units. Even though I'm not too type A about winning, it does really suck to ALWAYS lose. The other problem is a natural tendency to be too defensive, to huddle in base teching and not expanding and never being first one to attack. At lower levels of play like mine, it's almost a rule that the first player to attack frequently wins.
Anyway, I wound up reading this simple strat/build for early hydra drop on islands. Islands is actually good for a weak newbie like me because you don't have to sweat the mega early rush and can do a little bit of economy and tech without worry. This particular strat is good because a lot of lame newbiez pick protoss and figure automatically that they rule because protoss rules the air, carriers, etc. They figure you will make weak mutas and lose etc. Imagine the shock and dismay when 20 range upgraded hydras drop onto their nexus while their 3 stargates are completing their first carriers and they try to fight you off with a few dragoons and zealots hehe. It is a macro and not micro intensive strat once you are attacking, which I like, micro is very stressful. It certainly can be countered by a number of things, (early reaver drop, terran tanx/bunkerz defense, mass stimmed marines, zergling/muta combo by zerg) but did start getting me my first wins. Then that one strat, whether it's reaver drop, hydra drop, quick mutas, whatever, becomes an element of your arsenal. In other words, you know how to use the reaver/hydra/muta so that you can apply part of the strat in a suitable situation even in a different map than the one you cut your teeth on...
Even as a zerg I am weak. Other zerg always smoke me, mainly because my beloved hydras don't do well, clearly the zergling/muta is the way to go with z v z, and when under stress I tend to revert to cranking a lot of the unit I like best and am most comfy with, the hydra. So if I were to become really good with zerg, I'd have to master the zergling and mutas, which I'm not that great with. But all I'm saying is in the beginning it's not such a bad thing to be a one race/map/strat wonder, at least you'll be good at SOMETHING and also get some wins against players who aren't prepared for that particular strat, or who don't recon. Even once I started playing my second map, Lost Temple, hydra drop was very useful as there were a number of instances where I used it to secure the win (i.e. all defenses at choke, so fly in the backdoor).
